I was never much of a St. Patrick’s Day fan until a few years ago when I realized I was really missing out. There are so many fun things you can do with the leprechaun, pot of gold, rainbow, and green theme, from delicious treats to traditions and decorations. If you’re looking for a fun and easy way to celebrate the occasion with your kids this year, this St. Patrick’s Day snack is a great place to start. I made it for dinner with my little nephews a couple of years ago, and they loved it! The fruit takes a little while to rinse and chop, but any extra can be used to snack on for the rest of the week. And bonus: it’s pretty healthy too! (Minus the marshmallows and Rolos, of course!)
Here’s what you’ll need to make it:
- Strawberries, sliced
- Clementines, peeled and separated into segments
- Pineapple, cut into chunks
- Green grapes, removed from stems
- Blueberries
- Mini marshmallows
- Rolos
Start by making an outer arch with the strawberries. Follow it with layers, of clementines, pineapple, grapes, and blueberries to form a rainbow. Finish one end of the rainbow’s arch with a cloud of mini marshmallows, and the other with gold Rolos.
